Set out early from Bologna for a full day of flavor in the fabulous Emilia-Romagna region. Visit the cheese factory and you will first notice the size of the vats in which staff heat the milk before separating the curds from the whey. Begin at Vivoli, the oldest gelateria in Florence, which first opened in 1930. The recipe for the base of the artisanal gelato has not changed over the years as the same family continues to own and operate the celebrated store. The scent of vanilla and pistachio fills the room as the various flavors change each day when the gelato is made fresh in the morning.

The dome of Florence’s renowned cathedral catches the sunlight first in the morning as it stands an impressive 375 feet tall.
